Prawns Rawa Fry

Ingredients

1. Prawns: 1 kg (bite sized)
2. Salt: To taste
3. Turmeric: 2 teaspoons
4. Fish Masala: 2 tablespoons
5. Red chilli powder: 2 teaspoons
6. Rice flour: 1/2 cup
7. Rawa: 1 cup

Method

1. Marinate the prawns with salt, turmeric and freshly squeezed lemon juice.
2. Refrigerate it or freeze it until consumption (based on personal preference)
3. Before consumption, thaw the desired quantity of prawns. Coat the prawns with fish masala and red chilli powder. Mix it thoroughly and set it aside for 30-45 minutes.
4. Once the masala has been well absorbed, coat the prawns with rice flour and rawa. Rice flour absorbs less oil (this is for all the health conscious people). If you want your prawns to have an extra crunch to it coat it with a good amount of rawa.
5. Heat oil in a wok till it crackles. Add the prawns in it. Fry it till you see a crunchy golden covering.
6. Set the prawns in a serving bowl and add basil leaves as a garnish.
7. Serve it hot.
