Wholewheat Banana Zucchini Muffins

Ingredients

2 cups whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
½ teaspoon salt
1 cup sugar
2 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
2 ripe bananas
2 cups grated zucchini

Method

Heat oven to 180c and prepare a muffin pan with cupcake liners.
In a large bowl sift together the flour, baking soda, baking powder, cinnamon, and salt.
In a large bowl, add mashed bananas. . Add in the sugar, eggs, oil, and vanilla. Stir well until fully combined.
Add the flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined.
Add in the shredded zucchini and mix well.
Add 1/3 cup of batter to each cupcake liner.
Bake for 25-30 minutes, Tops should be golden brown
